Overnight Peanut Butter Banana Oat Smoothie (revised)

So, hubby and I made a commitment to hold each other accountable for eating better. We try to for the most part. But, these last few months we have been so busy that healthy has fallen to the way side.

So, I’ve started planning all our meals again and prepping what I can.
Hubby has a sweet tooth so I’m trying to cater to his taste without suffering our healthy goals.
I normally don’t add any sweetener to my smoothies. But, for him I’ll make an exception. Glad I did! It was delicious!

Overnight Banana Peanut Butter Oats Smoothie
(makes one servings)

1/2 Banana
1/4 cup regular oats
1/4 cup Almond Milk
1 1/2 tbsp Peanut Butter
1/4 cup Plain Greek yogurt
1 tsp vanilla extract
1 packet stevia
1 tsp Chia seeds
1 tsp Flax seeds

Throw everything into a jar (start with the oats and almond milk) and let it sit overnight. In the morning pour it into your blender and then back into the jar. Very little mess or fuss!

Zucchini Banana Bread

This was a “We have a ton of veggies and fruit on the counter….what am I going to do before this goes bad?” day.

What better than to sneak vegetables into something my picky boys will want to eat??

Thus….the formation of our Zucchini Banana Bread.

I have tried several versions of this bread. My favorite version comes from Two Peas and Their Pod . I take their version and just switch it up a bit.

I love that our boys ask for more. I don’t mind giving them several pieces for breakfast….snack….dessert….

This is how we make our bread!

Zucchini Banana Bread

Ingredients:

1 1/2 cups whole wheat flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 large ripe bananas, mashed (about 1 cup)
1/4 cup granulated sugar
1/4 cup packed dark brown sugar
1 large egg
1/3 cup melted coconut oil
1 teaspoon vanilla extract
3/4 cup shredded zucchini (I accidentally tossed my shredder when we moved….so I used the blender and chopped it. Works like a charm.)

Directions:

Preheat oven to 350 degrees F. Grease a 8×4-inch loaf pan and set aside. (I use spray form of Coconut oil)

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

In a large bowl, combine mashed bananas, granulated sugar, dark brown sugar, egg, coconut oil, and vanilla. Stir until well combined. Add the flour mixture and stir gently with a rubber spatula until flour is mixed in.

IMPORTANT STEP: Squeeze the zucchini in a paper towel to remove excess liquid. Fold the zucchini into batter.

Pour into prepared pan and cook until toothpick poked in the middle comes out clean!

We usually don’t have a lot left over after one day. But, if you do you can wrap it up in the clear plastic stuff and it will be good for up to three days.

Strawberry Banana Oats Smoothie

I know….another smoothie??

Honestly, I don’t know what I would do without them.

I decide what goes in.

I decide how much protein. How much fat. How much sugar.

And they are so EASY!!!

Sure there are other things I can make the night before to grab and go in the morning.

But, that usually requires several dirty dishes…..by the time I’m finished with homework, dinner, baths and working out ( on a good night)….I don’t want to worry with a bunch of dishes!!

So, smoothies are my ‘go to’.

The recipe for this one is pretty simple:

3/4 cp Regular Oats
Almond milk to cover the oats
1\2 cp Plain Greek Yogurt
1 medium banana
1 tbsp Peanut Butter
Fill jar with frozen strawberries
Top with
1tsp flax and chia seeds

Leave to sit overnight ( it can sit for up to three days) and in the morning dump into the blender!

Dump back into your cup, grab your straw and go!

I am always trying to sneak veggies into food for my picky boys.

For me, smoothies are a great avenue!! Especially if I add a sweetener. You’ll notice for my personal smoothies I tend to just go with the natural flavors. I may add honey if I’m adding anything.

Here is what I used in this one:

1 cp Frozen strawberry slices
Handful frozen kale
1 tsp local honey
1/2 cp Plain Greek Yogurt
3/4 cp oats (hungry this morning)
1 1/2 cups almond milk
1 tsp Chia seeds
1 tsp Flax seeds
Soooooo gooooood!!!!!

Peanut Butter Banana Oats Smoothie

Overnight oats….made into a smoothie!
(I hear angels singing)
I am always in a rush in the morning so smoothies are my ‘ Go to healthy breakfast’.
My favorite smoothies are made with Overnight oats.
Think about it. You put it in your jar that you’ll carry with you in the morning!
Less muss and fuss and you’re full until lunch!

Here’s the recipe for the one pictured above.
1/2 cup oats – I used regular this time
1 cup almond milk
1 ripe banana
3 tbsp Peanut Butter
1 tsp flaxseed
1 tsp chia seed

Leave in fridge overnight, put in blender, poor back in your jar, add straw and go!

( Don’t forget to rinse your blender or you’ll have a sticky mess on your hands when you get home!)
